Induction Cooking Finally Explained

Induction cooking is a bit of technology that we at Bill & Rod’s Appliance have really grown to love. The quick response of the controls paired with the added safety benefits makes this cooking method efficient and effective. Through technological advancements we have seen this become less expensive and attainable for everyday use.

How does it work?

Under the glass top of the range or cooktop there is a coil of copper that produces electromagnetic energy when powered up. Induction cooking uses this electromagnetic energy to work directly with the cookware to begin the heating process. This means the pan itself will be the heat source and not the cook surface. By not having to heat the surface you get faster, more even heating. Heating will also stop immediately when you remove the pan from the cooking surface or dial down the temperature. Many think of it as the best of electric and gas cooking.

Can I use my old pots & pans?

This is key to the cooking process for induction. Before you buy an induction range or cooktop, from Bill & Rod’s Appliance, we always recommend checking if your pots and pans are compatible with induction cooking. Often the cookware will say on the bottom that it is induction ready. If it does not, you will want to see if a magnet will stick to the bottom. With a magnet sticking to the bottom this means that the pan can interact with electromagnetic energy to allow you to cook.

Added benefits of induction

Induction cooking is very efficient so paired with using less energy, it produces less heat during the cooking process. While a hood is still recommended, you will not need to leave it at full blast the whole time you are cooking. You also will not have to preheat the pan while prepping your meal. Within a minute your pan will be ready for whatever you are putting in it.

Two things to be aware of:

  1. There can be a sound that comes with induction cooking. It is a slight buzzing and at Bill & Rod’s Appliance we have experienced a clicking sound on some brands.
  2. Pacemakers and some other medical devices can be affected by the electromagnetic field created by the induction cooktop. If you have one of these devices, you will want to consult your doctor prior to making the switch.

Pro-Tip!

Practice a few dishes before hosting a dinner party as the speed of the cooking will take a while to get used to. Be prepared, give yourself grace, and keep an eye on what you are cooking.
